The “I’m Not Here to Make Friends” Grapefruit Mimosa Jellies

If you’re like me, you enjoy recharging while watching mindless reality TV. In a recent episode of my podcast Horror Humor Hunger (check it out, available wherever you get your podcasts!), my special guest and I dissected the entire phenomenon of reality TV down to the roots — and let me tell you, there is plenty of horror there (and humor, of course).
As I do with every episode of my podcast for Hot Ghoul Summer, I’ve created a special recipe inspired by the horrors of reality TV that’s sure to satisfy those guilty pleasure cravings.
People on reality TV shows from The Bachelor to Too Hot to Handle to The Real Housewives are always popping champagne, so it’s no surprise the bubbly beverage is the star of this dessert. For those who don’t imbibe, you can easily substitute sparkling apple cider for the champagne. Enjoy!
Recipe: “I’m Not Here to Make Friends” Grapefruit Mimosa Jellies
Ingredients
- 3 Tbsp unflavored powdered gelatin
- 2/3 cups of champagne
- 2/3 cup grapefruit juice (strain if pulpy)
- 1/4 cup granulated sugar
Directions
- Mix the powdered gelatin into 1/3 cup of water and let it sit for 5 minutes. In a saucepan, heat the champagne, juice, and sugar to a simmer. When the gelatin is ready, mix it into the champagne-juice-sugar solution and whisk until dissolved. Remove from heat and let it cool for 5–10 minutes.
- I used a loaf pan as my mold, but any baking pan or specialized jelly mold will work. Pour the jelly mixture into your mold of choice and put the pan in the refrigerator. Let it cool until fully set, about 1 hour.
- Unmold and serve! If your jelly is sticking, dip the mold in a bowl of hot water until it loosens enough to unmold.
