The Meatball Sub Casserole That Will Feed Your Fears

If you haven’t yet read my short story The Leak or listened to season one of my podcast Horror Humor Hunger, you might want to! Of course I’m biased, but this recipe was custom-created by an expert bakeware inventor and recipe developer just for that story.
The Leak is about a pariah named Andrew Ferenc who finds himself trapped in a deserted subway station during a water barrier test. The barrier is leaking, but that’s not the worst part — he quickly realizes he’s not alone.
This recipe, inspired by the story, is sure to refuel you after the adrenaline rush of terror. Perfect for a crowd and a great idea for meal prep, this meatball sub casserole will definitely feed your fears.

Recipe: “The Leak” Meatball Sub Casserole
Ingredients
1 lb lean ground beef
1 Tbsp Italian seasoning
1 tsp dried basil
1/2 tsp garlic powder
1/2 tsp salt
1/2 tsp pepper
1/4 cup Panko breadcrumbs (or crushed gluten-free crackers)
1 egg
2 submarine buns, medium diced (or 3 gluten-free hot dog buns)
1 Tbsp olive oil
1 jar of your favorite marinara sauce (we used a 16-oz jar of Rao’s)
1/2 green bell pepper, diced
1/2 yellow bell pepper, diced
1/2 yellow onion, thinly sliced
1 Tbsp minced garlic (2–3 cloves)
1/2 tsp red pepper flakes
1 tsp dried oregano
2 cups shredded mozzarella

- Preheat oven to 375F.
